Its Roast Chicken Season

I get a lot of pleasure out of coming up with new ways to roast chickens. I tend to do this with out a lot of thought to recipes and just do it all by feel, and haven’t had a terrible experiment yet. So I’m usually pretty confident when I do that.

Last Sunday night I stuffed rosemary leaves under the skin of a 4 pound chicken, rubbed it down with salt and olive oil and then stuffed half an orange inside the cavity and squeezed the other half on top of it.

I then added in some Shipyard Pumpkin Beer (which isn’t too pumpkin spicy and mostly just pumpkin) for added moisture. And I cooked it for about 2 hours at 375F. I also took the jus of the orange, olive oil and beer and reduced it for a really lovely sauce.

I did not put points together for this as I was making it, because I’m stupid.

But to guess, it’s roughly 3 points for a 3 oz serving of chicken and I used about 6 fl oz of beer which is 3 points, the fresh orange were zero, the olive oil used was about 2 tbsp for 6 points, the one sprig of rosemary was also zero points. I estimate that with the jus from the pan (I took off a lot of the oil that was on top in the pan) one serving of the chicken it was equal to about 7 or 8 WW points.

And damn it turned out well. I was so pleased with how that chicken came out.

I served it with fresh pasta and vodka sauce, roasted onions and peppers and a big salad. Those sides all in were roughly 11 points. So it was a pretty hefty dinner but so, so good.

I didn’t get a chance to take a picture of it because my father is pretty against the taking of pictures of ones food, so yeah…

All in all, such a good Sunday night meal!


I’m so ashamed

I can’t even. Except to laugh about it. I don’t even know what happened with yesterday. It’s unbelievable honestly. I came home and tracked it all and just had to laugh.

My mother was helpful and laughed with me even while giving me the “wtf were you even thinking of?!” look that all mothers have perfected. And we laughed as I told her the crazy of my food day.

To be fair, it was kind of a crying laugh, but still. I’m just overwhelmed at how ridiculous this is.

For whatever reason my sweet tooth kept hounding me and I had no will power today to fight it. I’m seriously ashamed of myself. Especially after saying that I’d be better this week.

So in punishment I got myself up early and went on the machine this morning so that I could at least pretend that I did something good about it.

But oh my god. I had a slice of pound cake at lunch. And then I had a hot chocolate (small with no whipped cream I didn’t go overboard people) and then a glazed chocolate donut.

I’m shocked and disappointed with myself for even eating like that yesterday but proud that I tracked it and took responsibility for my actions.

Seriously though. I’m eating salad for the next six days for at least two meals a day.

Weekly Weigh In: A Sigh

I’m down 1.7 pounds. Which means I’m almost back to where I was two weeks ago. Which is fantastic and thrilling and just makes me feel so much better about life.

This past weekend was a lot of crazy in a ten pound bag, but not as regarding food! Which was a nice change for me after the past few weeks.

I didn’t make a huge dent in my activity, via the ActiveLink. I’m still not really moving a whole lot during the day, but I have scheduled little reminders through my WW app to remind me to move for a few minutes every hour. And its a nice little reminder to actually move.

Actually, if I’m being honest, I didn’t even make the 100% mark any day except Sunday, and I only made the 100% because there was a crazy big tree that fell across the driveway at my parents house.

because it was just me who had to move all the branches out of the way. My parents said that they’d help later when they got home but I knew they wouldn’t be home from helping my sister move into her apartment in NYC until at least 6 p.m. and by then (thanks to Daylight Savings Time) it would be incredibly dark out and no one would want to do that. So I just moved it all myself, with the help of a rake, a hatchet and a hand cart for the big pieces.

After that I started putting Sunday dinner together. I got to make my favorite thing – Roast Chicken.

It turned out so well! I’ll be posting a separate thing about this chicken, even though I didn’t get a picture of it.

Other than that, this weekend was pretty good. I went to Ikea on Saturday, got my bed frame and a bookcase and some other things for my apartment. And its all coming together on that end.

I started packing up my books (I have so many freaking books) and cleaning my room before the move, which is emotionally exhausting. I threw away all of my old reporters notebooks that were full. I got some good advice early in my journalism career – never keep a notebook just in case you get sued for libel. They can’t take notes if you don’t have them anymore.

My parents were really shocked when I explained that.

Anyway, my goal for this coming week is to be better at moving! I want to try and get at least 6 activity points this week (outside of any I get on Friday from getting my stuff into my apartment). That’s one point a day, which I think I can do. I hope I can do it anyway.

We’re going to try.

‘Tis All Hallows Eve!

I hope your house didn’t get trashed during mischief night last night… If it did. I’m so sorry.

I carved my pIMG_3295umpkins last night, which was hilariously awesome. I generally really enjoyed that part of it. I usually do some abstract faces but this year I went with Starry Night and a Haunted House.


The house was actually the first one like that I’ve ever done! And it was mostly freehand. I mean, I drew the house on the pumpkin beforehand, but I drew the house, I didn’t use a stencil. So I’m pretty pleased. Though I did learn a valuable bit of info lat night, if one has small bits in ones large pumpkin carving one should cut the small bits out first…

I had to reinforce a few places with toothpicks… But whatever! I had fun doing it. While I did this, I was saving my pumpkin seeds, because I love roasted pumpkin seeds. However, I have since learned that 1 cup of pumpkin seeds, roasted with no oils or anything added is like 7 points!

To be fair, a 1/3 cup is only 2, and that’s all I brought to the office, but still. It makes me cranky that my seeds cost points. There I was thinking I was clever when really I was adding points to my day!

And for me tonight, a party. But I’ll be driving about a half hour to get home so there won’t be a lot of drinking for me, if any at all. Because it’s a party where I literally know no one but my friend who invited me so that she wouldn’t feel so alone… So it should be interesting…

Despite the holiday celebrations this week I’ve been pretty good! And my weekend is pretty clear of heavy food things so I’m hopeful that I’ll have a good result on the scale next week!

Pomegranates, My One True Fruit

Early this week I had a feeling. A niggling feeling that something great would happen if I went to the grocery store. Not Trader Joes. But a full on grocery store. And so I went. I took myself across traffic and into the giant mega store and wandered into the produce section.

And there they were. My most favorite fruit in the whole world, waiting for me to take them home: Pomegranates. Beautiful ruby red pomegranates, perfectly ripe and ready for consumption.

I first had a pomegranate in my sophomore year of college when a professor brought one in for us to try and then write a short story about. My short story didn’t go anywhere, but my love of the seasonal fruit flew off the rail.

From then on, every year during pomegranate season I head to the grocery store produce section and buy the delicious fruits to nom on. And I tend to eat one a day, all by myself when I can get them en masse at the store. It doesn’t even break the bank for me, I can generally find them on sale at 2 for $5.

Now, the season is typically from September through May (with a crossover from the hemisphere) but this year, the northern hemisphere was a bit off so it was delayed a little. And generally speaking, one shouldn’t buy pomegranates out of season, they’re tart and not as ruby as they are during the season. The POM juice is fine if you’re like me and craving, but I learned long ago that the pre-packaged seeds are really not great, even in season.

At first, I was just eating them because they were tasty, but as time went on and I realized that I needed to take control of my weight I realized some very important things about my favorite fruit.IMG_3272

  1. It’s full of fiber, and therefore makes you fuller and not eat quite as much (especially if you eat the whole seed)
  2. Huge immunity boost, one fruit is 40 percent of your vitamin C for the day
  3. They can help lower blood pressure
  4. Major antioxidant game

Here’s something else – it satisfies my need for crunch and sweet at the same time.

Which for me is huge. Getting those two together takes a lot of things that I would normally snack on and throws them out the window. Like carbs.

Also, it slows me down. To take all the seeds out and really work at not squishing all of them it take some time! I generally spend 20 minutes peeling and taking out the seeds so that I can get as many whole ones into the bowl as possible.

The fruit is zero points on Weight Watchers, so you can eat a whole one with immunity and not worry about your points. But if you go for the POM juice, which I do (I like it with seltzer) it’ll cost you some. It’s 4 points for 8 oz.

I’ll generally mix in a 1/4 cup of POM to a cup of seltzer and that tends to cut the tartness of the POM and is only 1 point, so I can make those expensive little bottles last longer.

Oh the ActiveLink…

I’ve finished my, what I’m calling, probationary week on ActiveLink and now I’m getting all the the info about my activity and not just what I do in my sleep.activelinkDid I mention I can wear this thing in bed? It monitors my sleep. I apparently don’t toss and turn as much as I always assumed I did.

Anyway. I’m now on the challenge part of my ActiveLink. It wants me to be earning between 2-4 activity points a day by the end of the 12 week challenge.

I think I can do it? In two weeks I’ll be living in my new apartment with the super nice gym that will be free for me to use at all hours, so that should help with the exercise thing. Mainly because my sister has told me that she’ll kill me if I don’t take advantage of the gym facilities. And honestly, whats the point of paying the amenities fee if I’m not using the amenities?

Other than that, I’ve enjoyed seeing just when and how much I move. Its interesting. The numbers are from just after I got to work and plugged it in to sync, which is why my ‘today’ number is so low. Not that I’m really expecting it to get much higher. There isn’t a lot of movement going on during the course of the day. At least, not big movements.

Part of this is me realizing that I need to really get up and move for at least a few minutes every hour. Which is something that has been told to me on any number of occasions, but its now becoming really clear that I spend most of my day not moving a whole lot.

So Tic Tacs

Am I right? Addictive little things aren’t they? You can’t just stop at one can you? You have to go ahead and eat the whole box. Or in my case. The 200 packs.

IMG_3266Now I’ve taken to eating tic tac’s because they’re sweet and small and a little bit crunchy so they satisfy a lot of needs. But I realized yesterday that I wasn’t actually tracking my gigantic intake of these tiny irresistible candies.

So I looked it up today on Weight Watchers. And wtf.

You could (and I have) eat the entire 200 box and not have to track a single point. There seems like there is something inherently wrong with this situation, but at the same time, who am I to look a gift horse in the mouth?

I eat a lot of the stupid candies and they keep me from snacking on the seriously high sugar, high calorie, high point value things that I would be otherwise.

That said, I’m not a huge fan of putting maltodextrin, tartaric acid, magnesium stearate, ascorbic acid carnauba wax or artificial flavoring into my body.

And half of me is wondering if the numbers of tic tacs I’m eating has contributed to my never ending headaches… Perhaps I should stop eating quite so many of them…
